Cooking one cup of rice in a pot and add 5 cups of water (more water is better than less). Until rice soft (but still have good amount of water in), add salmon in the can, one mixed egg and salt. The rice will be come sticky soon after the egg is added in. Turn off the heat, add some scallion and soy sauce.
I tried to make Pho today!
I love Pho, and want to eat badly. However, there is no Vietnam restaurant near where I live and my beloved Pho Boston is a hour away. So I finally decided to make it myself. I searched online and find a good receipt. It's like of like Chinese food that it is easy to cook, but just long time to prepare. I wish there is a good Asian market near me too, so I didn't have to go to stopshop and whole foods to look for what I want. The total cooking time is a hour and half, but a hour is for cooking the soup which I didn't have to do anything but just wait. The noodle came out great! Mr.Rabbit likes it too. I am happy to know how to make it. I made new noodle yesterday. I like to make noodle because it is fast and easy. Normally, I make simply spicy noodle, but I got tired of it. Lately, I have been making different kind of noodles.
Salted mustard with pork noodle is from my hometown. I didn't eat often when I was home, but I do like it and remember how Delicious it is. So I found a receipt online. It came out good! And it's easy to make too. My mom told me to make some soup which is good for woman's health. So, I made the easiest breakfast soup: red dry plum+Chinese lycium with egg.
Dry plum and Chinese lycium are well known to warm up the blood in Chinese medicine. And, woman is considered natural colder than man. So, we need to keep our blood warmer (which actually means to make stronger heart, so the blood can be pumped easier and faster). This soup is really easy to made. Just boil dry plum and Chinese lycium in a pot of water, add egg and sugar. It's easy and tasteful. Tomato is very health for you, it's proved to prevent cancer as well. The benefit of egg is well-known and doesn't need me to say much. This is a very health dish. Chinese culture is big on natural healing. A lot of people would go to natural herbal medicine doctor for regular health care. I am a big believer on that too, hate pills but don't mind to drink the bitter natural herbal medicine. The dish Tomato egg is considered as a very health and easy to cook daily dish. It's very simple and there is almost no way to make it taste bad. This dish take you about 20 mins. Kind of short for cooking Chinese food. The things you need (for 2 people): 2 eggs 2 tomatos 1/4 tea spoon of salt 1 stalk scallion 1/4 tea spoon of sugar (white) 1.5 table spoon cooking oil (any kind) 1-2 table spoon ketchup (an add on if you like) Let's cook! Add the scallion in when the tomato become soft. Some tomato is juicier than other. If the dish is watery due to the tomato juicy, it's perfectly fine. Some tomato is softer than other as well, so the tomato can be in a solid form or formless. Add some salt (1/4 of tea spoon is fine or more depends on you), turn off the heat and mix them well.
I do add ketchup sometimes even though the Chinese way is without it, just add salt. But Ketchup give the dish more tomato flavor if the actual tomato does't taste much. Or sometimes, I just add ketchup for heavier flavor. You can add ketchup in the last minute.
This is a really simple dish. I learned it before age 10, so I am sure you can do it~! Today, we are having a very traditional and well-known Chinese family style dish. Everyone knows this dish and all the mothers know how to cook it. It's called "Potato Roast Pork". Depends on how much time you have and how flavorful the potato you want, this dish can be ready in a hour or a few hours. For 2 people, you will need: 2 Potato (any kind, white, red, Idaho, etc.) 1 Lb Pork (any kind, lean, shoulder, chop, ribs, etc.) 2 stalks scallions (also known as green onion) 1 ginger of your thumb size 1 table spoon of sugar (brown or white) 2-3 star anises (you can find it at most Asian food market) 1.5 oz to 2 oz of soy sauce (depends on how flavorful you like) 1 oz of cooking oil (any kind, olive oil is fine too) 1 tea spoon of cooking wine (can be find in most Asian food market) Now, with all we need, let's do it step by step. Close the lid. If you only have half hour, turn the heat to high. That way the potato will cook well but the flavor won't sink through. If you have few hours, turn the heat to low. The flavor will be cooked through the potato. Flip the food every 10 mins when the heat is high and every 30 mins when the heat is low.
Add the scallions 15 to 30 mins before end of the cooking. If there is less water in the wok, turn the heat down or add a little bit water. If there is more water, heat the wok more. Taste the food, see if it is flavorful enough. Add a little bit of salt if it isn't flavored enough or add more water if the flavor is too heavy.
I still remember that I'd go to the kitchen, pick out a hot soft potato by my fingers, put it in my mouth because my parents notice during the night when I was young. My mom always like to cook them in a very low heat over night. And the wonderful smell make me sleepless! This is always my favored meal. Goes well with rice~!
